This Clove Cake recipe from 1877 is one that I consider a "must-try". Of all the recipes I've made during this project, this not-too-sweet, perfectly spiced cake is a favorite!
MODERN COOKING NOTES:Preheat oven to 350.Beat together sugar and butter until light. Add eggs and milk, stir until well incorporated. Reserve ¼ cup of flour. Sift remaining flour, cloves, and soda, into batter, and stir well until thoroughly mixed. Toss chopped raisins with reserved ¼ cup of flour, and dump the floured raisins into the batter. Stir just until evenly distributed. Spoon batter into a well greased and floured pan. Bake until cake edges are golden brown, center is set, and a broom straw (or toothpick) comes out clean--about 1 hour depending on pan(s) used. Cool thoroughly, then frost or glaze if desired.
