Huckleberry Cake

From Common Sense In The Household, 1871. This delicious cake is a wonderful treat, when blueberries are in season!

Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 3 cups flour
  • 5 eggs
  • 1 cup milk
  • 1 teaspoon soda (dissolved in 1 T hot water)
  • 1 teaspoon nutmeg
  • 1 quart fresh blueberries
  • 2 tablespoon flour (for dredging)

Instructions

  • Stir the butter and sugar to a cream,
  • add the beaten yolks;
  • then the milk, the flour, and spice, the whites whipped stiff, and the soda.
  • At the last stir in the huckleberries with a wooden spoon or paddle, not to bruise them.
  • Bake in a loaf or card, in a moderate but steady oven, until a straw comes out clean from the thickest part.
  • This is a delicious cake, and deserves to be better known.

Notes

Modern notes: 
Begin by beating the yolks until thick and light yellow, and the whites until dry and stiff. Heat over to 330° F. Prepare two loaf pans, or 2 9x9" pans by thoroughly greasing and flouring, or lining with greased paper (parchment paper is a good substitute).  Mix cake as instructed. Bake for 45-65 minutes, depending on the shape and size of your cake pans, until cake is golden brown and a straw or toothpick comes out clean.
